As you may already know from the blog posts, I have a deep fondness for anything almond, from almond paste, also known as marzipan, a simple blend of ground almonds (or almond meal) and sugar, to almond butter, cream of almond, and of course frangipane. Each brings its own gentle sweetness and texture, working in quiet harmony. These little Marzipan Fruits , by the way, are a delightful expression of that balance, and one of my all-time favorite cakes, the Marzipan Princess Cake, beautifully brings all those flavors together.
While I’m not a professionally trained baker, I love keeping things simple and approachable. So today, we’re making a wonderfully easy almond cake using just a handful of basic ingredients, all mixed together in one bowl. It’s straightforward, reliable, and delicious. Start by preheating your oven to 350°F, then butter your pan well. The cake will bake for about 30 minutes, until perfectly golden and set.
In a large mixing bowl, begin by creaming together the butter and sugar until the mixture becomes light, smooth, and slightly fluffy. This step helps create a tender texture in the finished cake. Next, add the eggs one at a time, mixing well after each addition to ensure everything is fully incorporated. Stir in the almond extract to infuse the batter with its warm, aromatic flavor. Gradually add the almond flour, a little at a time, gently folding and mixing until the batter comes together into a smooth, cohesive mixture with no visible lumps.
Ingredients:
2 cups almond flour
3 whole eggs
½ cup granulated sugar
½ cup or 1 stick melted unsalted butter
2 tps pure almond extract



Lightly sprinkle powdered sugar on top of the cake for decoration, because nothing says “professional pastry chef” quite like a strategic snowfall of sugar. (The cake in the picture was one of my early attempts, and yes, the powdered sugar was meant to resemble snow… let’s just say it was a very enthusiastic blizzard.) You can also add slivered almonds, if you’d like to suggest that this was all entirely intentional.
On a final note, this almond cake deserves the name French Almond Cake. Naturally gluten-free, it’s a lovely treat to enjoy any time of day, whether as a cozy breakfast, a comforting mid-day pause, or a sweet companion to a warm cup of coffee or tea.
